Sasu Laukkonen
Sasu Laukkonen is one of Finland’s most distinctive culinary voices. A Michelin-starred chef whose career has evolved from fine dining to artisan knife-making. As the former owner-chef of Chef & Sommelier and ORA in Helsinki, he became internationally recognized for his ingredient-driven Nordic cuisine, deep respect for small producers and early commitment to sustainability. During the pandemic, Sasu discovered a new creative path: transforming discarded steel into handcrafted culinary knives. This passion grew into ResQknives, a workshop where every knife is made from upcycled or recycled materials and finished with carefully selected Finnish wood. His approach blends precision, artistry and environmental responsibility, offering chefs tools that carry both story and soul. Today, Sasu collaborates with chefs, makers and food communities across Europe, sharing insights into craft, sustainability and the future of Nordic gastronomy. He continues to move fluidly between the kitchen and the workshop, shaping culture in both worlds.
